CHICKEN ROAST
* Chicken -2kg
*Onion - 5 big
*Tomato - 3 big
*Green chilli -1
*Small onion- 300gm
*Ginger garlic paste - 50gm
*Mustard seeds - 1 tsp
*Raw spices -1 tsp
*Chicken masala - 1 1/2 tbsp
*Garam masala -1 1/2 tbsp
*Turmeric powder - 1 tsp
*Chilli powder - 4 tbsp
*Coriander powder 2 1/2 tbsp
*Coconut oil - as reqd
*Curry leaves - as reqd
*Salt to taste
MARINATION
Marinate chicken pieces with turmeric,chilli,salt and some coconut oil.Mix well and keep aside for 2 hours.
PREPARATION
Heat a pan and add oil,mustard seeds, raw spices, curry leaves.After the crackling add ginger garlic paste. Fry it until the raw smell is gone.The add sliced onion,small onion,salt and saute for 5 mins.After onion become translucent add turmeric powder and 1 cup of water. Let it cook.After the water becomes dry add red chilli powder,coriander powder and saute until the rawness is gone.Then add marinated chicken pieces and fry for 5 mins in high flame.After 5 mins turn the flame into medium and add salt if need, pour 1 cup of water and let it cook. Stir in b/w the time.When the chicken is 80% done add sliced tomatoes and garam masala. Saute it until the tomato is cooked. After that add chicken masala and stir fry it. When the oil come's to separate adda hand full of curry leaves and switch off the flame.
